Tuesday Shoesday
If you are a Tori Spelling fan, you've probably seen her posting about a wedding shes been planning. The theme was shabby chic complete with tiffany blue and mason jars. The most amazing pair of shoes came out of the process!!! I love the style and pearl embellishments.

Sunday Yumday- Soups On!
Like it or not, winter is here. 'Tis the season for snow, sleet, ice, coughs and colds.
This time of year is perfect for one thing- homemade chicken noodle soup! I always make a big batch and freeze some in lunch size portions. Whats more perfect than a hot cup of soup for lunch on a cold winter day?
Here is what I use to make mine:
Chicken Broth- Sodium Free/Fat Free (4 cans)
Water (4 cups)
Carrots
Celery
Onion
Chicken
Egg Noodles
Basil
Cracked Black Pepper
Old Bay Seasoning
1. Start by slicing your veggies
2. Bring broth, water, spices to a boil. Add veggies and chopped basil
3. Cut up the chicken. ( I buy a rotisserie chicken to save time)
4. Once your veggies are soft, add chicken and egg noodles.
5. When egg noodles are soft- it is ready to eat!!

Sunday Yumday!
Geoff gets the credit for this Sunday Yumday. He decided to try making Eggplant Rollatini and it was delicious!!
2. Fry the eggplant on each side until golden brown. Remove to a paper towel lined plate to drain.
4. Spread a thin layer of ricotta cheese onto each slice of eggplant. Place a slice of prosciutto onto each one. Roll up tightly, and place seam side down in a 9x13 inch baking dish.
5. Pour spaghetti sauce over the rolls, and top with shredded mozzarella cheese. Bake for 15 minutes in the preheated oven, until the cheese is melted and lightly browned.
6. Enjoy!!!
Ingredients
1 eggplant, peeled and cut lengthwise into 1/4 inch slices 1 egg, beaten 1 cup Italian seasoned bread crumbs 2 tablespoons olive oil 1 cup ricotta cheese 10 slices prosciutto 1 (14 ounce) jar spaghetti sauce 2 cups shredded mozzarella cheese
Directions:
1.Dip the eggplant slices in egg, then coat with bread crumbs. Heat the olive oil in a large skillet over medium-high heat.2. Fry the eggplant on each side until golden brown. Remove to a paper towel lined plate to drain.
3. Preheat the oven to 350 degrees.
5. Pour spaghetti sauce over the rolls, and top with shredded mozzarella cheese. Bake for 15 minutes in the preheated oven, until the cheese is melted and lightly browned.
